BAKED STUFFED ONIONS 
4 good-sized onions
2 oz. blue cheese, crumbled (1/4 to 1/2 c.)
1 c. grated Jack cheese
3/4 tsp. fresh thyme
2 tbsp. butter
1/4 c. fine bread crumbs

Preheat oven to 400 degrees. Bake unpeeled onions 1 hour. Remove from oven. Cool to handle. Set oven to 500 degrees.

Peel onion, cut slice off end. Scoop out center, leave 1/2 inch shell. Chop about half of removed onion, mix with cheeses half of thyme and 1 tablespoons butter. Stuff into onion shells.

Mix rest of butter, thyme with bread crumbs and put on top of stuffed onions. Bake about 20 minutes or until browned. Serve immediately.
