HAWAIIAN MEATBALLS
1 1/2 lb. ground beef
2/3 c. cracker crumbs (optional, I use oatmeal)
1/2 c. chopped onion
2/3 c. milk
Salt
1/3 c. flour
3 tbsp. shortening
Sweet and sour sauce

Combine first 5 ingredients; mix lightly but thoroughly. Shape into 30 balls. Roll in flour; brown meat in shortening. Drain excess fat. Prepare sweet and sour sauce. Pour over meatballs and simmer, covered, for 15 minutes. Yield 6 portions.

SWEET AND SOUR SAUCE:

1 (13 1/2 oz.) can pineapple chunks
2 tbsp. cornstarch
1/2 c. vinegar
1/2 c. brown sugar
2 tbsp. soy sauce
2 tbsp. lemon juice
1 c. coarsely chopped green pepper
1 tbsp. chopped pimento

Drain pineapple chunks and reserve pineapple. Measure pineapple juice. Add enough water to make 1 cup. Blend together pineapple liquid and cornstarch until smooth.

Stir in the next 4 ingredients. Cook until thick and clear. Add pineapple chunks, green pepper and pimento. Mix well. Pour over meatballs and simmer over low heat for 15 minutes.
