ALMOND CHICKEN | |
3 lbs. chicken breasts, skinned and boned 1/3 c. Tamari 1 tsp. ground ginger 1 tsp. garlic powder 1/2 c. whole wheat flour 1/2 c. finely ground almonds 1/2 tsp. salt 1/2 tsp. pepper 2 tbsp. corn oil In large bowl, combine soy sauce, ginger and garlic. Cut chicken into bite size chunks and marinate in soy mixture while preparing other ingredients. In another bowl, combine flour, almonds and the rest of the seasonings. Add this to the chicken and toss until well coated. Heat oil in wok or large skillet on high heat. When oil is hot, add the chicken and turn the heat down to medium. Cook, covered, stirring often, about 20 minutes. Serve with rice. 8 servings. |
