GROUND BEEF CASSEROLE 
7 tbsp. butter
1 1/2 lbs. ground beef
1 lg. onion, peeled, diced
2 c. peeled, diced carrots
3 c. peeled, diced potatoes
3 tbsp. flour
1 1/2 tsp. salt
1/4 tsp. pepper
2 c. milk

Preheat oven to 350 degrees. Grease casserole dish with 4 tablespoons butter. In a large skillet, melt remaining 3 tablespoons butter. Brown ground beef and onion lightly. Add carrots and potatoes and pour into dish. Place flour, salt and pepper in saucepan and gradually add milk over low heat until slightly thickened. Pour over beef mixture and bake 1 1/2 hours or until potatoes are tender. Serves 6 to 8.
