GOLDEN SQUASH MUFFINS | |
2 1/2 c. whole wheat pastry flour 2 1/2 tsp. baking powder 1/4 tsp. salt 1 tsp. grated orange peel 1 egg 1/4 c. honey 1/3 c. vegetable oil 1 c. milk 3/4 c. cooked winter squash - such as butternut or acorn 1/4 c. raisins Mix dry ingredients in a bowl. In a separate bowl beat egg with a fork, then add milk, honey, oil, squash and raisins. Mix well. Mix wet and dry ingredients. Fill 12 muffin cups and bake in 400 degree oven for 20 to 25 minutes. |
