FLOUNDER WITH SHRIMP SAUCE 
4 flounders, skin removed (or haddock)
Juice from 1 lemon
Salt and pepper to taste
3 tsp. all-purpose flour
1 egg
4 tsp. bread crumbs
1/2 lb. sm. shrimp, cooked
1 c. mayonnaise
1 tbsp. chili powder
1 tbsp. sherry (optional)
6 tbsp. oil
1/8 tbsp. curry powder
Fresh dill or parsley

Sprinkle flounder (or haddock) with lemon juice. Season with salt and pepper. Dip in flour. Mix egg with fork. Dip floured fish into egg, then into bread crumbs.

Combine shrimp with mayonnaise, chili sauce, curry powder, and sherry. Add a pinch of salt and pepper. Set aside.

Heat oil in skillet. Add fish. Cook over medium heat for 3 minutes on each side. Serve on warm plate. Garnish with dill or parsley. Pour shrimp sauce over fish or serve on side.
