WATERMELON RIND PICKLES 
3 lb. watermelon rind
3 lb. sugar
1 pt. white vinegar
Whole cloves (baby handful)
1 tbsp. whole allspice
4 sticks cinnamon

Peel green from watermelon. Very little pink should be left on other side of rind. Cut into pieces. Place in pan covered with cold water and bring to a boil. Reduce heat and simmer for a time until the rind can easily be pierces with a fork. Combine remaining ingredients and bring to a simmer. Let simmer a little while. When rind is done, rinse and soak in cold water, replacing water several times. Drain and cover with ice cubes. Combine syrup and drained rind in saucepan and simmer 45 minutes. Put in jars while hot along with the syrup and spices.
