STUFFED FLOUNDER 
1/4 c. chopped onion
1 (3 oz.) can mushrooms, drain and reserve liquid
1 1/2 tsp. parsley
Dash pepper
3 tbsp. butter
1/4 tsp. salt
1/3 c. white wine
1/4 c. butter
8 oz. crab meat
1/2 c. crushed saltines
1/2 tsp. salt
8 flounder fillets (2 lbs.)
3 tbsp. flour
Milk - paprika
4 oz. shredded Swiss cheese

In skillet cook onion in 1/4 cup butter until tender. Stir in drained mushrooms, crab, crumbs, parsley, salt and pepper. Spread mixture over fish. Roll fish, put seam side down in baking dish.

In saucepan melt butter, blend in flour and salt. Add enough milk to mushroom liquid to make 1 1/2 cups. Add with wine to saucepan. Cook until thick and bubbly. Pour over fish. Bake at 400 degrees for 25 minutes. Sprinkle with cheese and paprika. Bake an additional 10 minutes. Serves 8.
