2 lbs. lean hamburger 1/2 c. flour 1/2 c. fine dry crumbs 2 tbsp. grated onion 1 1/2 tsp. salt 1/2 tsp. pepper 2 eggs 1 1/2 c. milk 1/2 lb. mozzarella or Monterey Jack cheese, cut into cubes Butter for frying 1 lb. fresh mushrooms 1 c. whipping cream Cayenne pepper Salt Mix hamburger, flour, crumbs, grated onions, salt and pepper. Add beaten eggs and milk. Beat by hand until very light. Smooth top of mixture and chill. Heat skillet; add butter to 1/4 inch deep. Dip metal spoon in hot butter, cut into mixture. Have cube of cheese and cover with meat mixture. Put in pan and brown. Remove to shallow baking pan at 250 degrees for 25 to 30 minutes. Saute mushrooms. Push aside. Add cream, stir. Season with cayenne and salt. Put meat on platter and pour sauce over pile. Experience enables you to recognize a mistake when you make it again. |
