ROBIN'S QUICHE 
Coronoque Orchards 9 inch pie crust

BATTER FOR 2 PIES:

1 1/2 c. milk
3 eggs, beaten
Some pepper
3/4 c. flour
1/4 c. oil

FILLING FOR 1 PIE:

10 oz. fresh or frozen chopped spinach, defrost and squeeze out all liquid
4 tbsp. plain yogurt
3 tbsp. grated Parmesan cheese
Some mushrooms
Some shallots or onions
Mozzarella cheese (about 8 oz.)

Mix spinach with mushrooms, yogurt, shallots, and Parmesan cheese. Put this in pie crust and add Mozzarella cheese. Pour batter over all until full. Bake at 375 degrees for 40-45 minutes. Delicious brunch!

I used this recipe to make Mini-Quiches for a road trip. I accidentally put the yogurt in with the batter instead of the filling, but it worked just fine. I was able to make 24 mini-quiches with the recipe. Thank you Robin!
