EASY BUTTERMILK ROLLS 
1 c. buttermilk
2 tbsp. sugar
4 tbsp. shortening
1 1/2 tsp. salt or less
1/4 tsp. baking soda
1 cake yeast or 1 pkg. yeast
2 3/4 c. sifted flour

In medium saucepan, heat 1 cup buttermilk until lukewarm. Remove from heat, add 2 tablespoons sugar, 4 tablespoons shortening (or butter or oil), 1 1/2 teaspoons salt, 1/4 teaspoon baking soda, 1 cake yeast. Stir briskly until blended. Add 2 3/4 cups flour. Mix to moderately stiff dough. Turn out on lightly floured board, knead gently for a few strokes. Replace in pan; cover. Let rise 40 to 45 minutes. Shape into rolls in greased pans, brush tops with butter and let rise until double in size. Bake 15 minutes in 425 degree oven. Makes 1 1/2 dozen. Makes delicious pizza dough; add your favorite toppings!
