GAZPACHO 
1 sm. cucumber, chopped
1 green pepper, chopped
1 sm. onion, chopped
2 sprigs parsley, chopped
1 clove garlic, mashed
6 tomatoes, skinned, chopped
1 c. chilled tomato juice
3 tbsp. olive oil
2 tbsp. vinegar
1 tsp. salt
1/4 tsp. pepper
Dash Tabasco, if desired
Hot pepper, if desired

Mix all ingredients together. Cover and chill several hours. The longer it stands the better it is. Additional spices (chopped basil and dill may be added if desired). Additional vegetables (chopped carrots, celery, red or purple peppers can be added). For each additional vegetable, increase 1/2 cup juice and 1 tablespoon oil and vinegar.
