3 cans corn (2 whole, 1 cream) 1 can whole tomatoes 1 pkg. Bryan smoke sausage 1 lb. ham, cubed 1 lg. or 2 sm. onions 1/2 sweet pepper 4 shallots 3 toes garlic 1 stalk celery 2 bay leaves Salt and pepper to taste Fry sausage, not ham. Set aside. Fry off all seasonings in the same. Drain tomatoes, chop and add to seasonings. Cook until tomatoes turn from red to rust. Add drained tomato water and cook on medium heat 15 minutes. Add corn, do not drain. Cook 20 minutes. Now add salt, pepper and bay leaf. Cut sausage, bite size. Add sausage and ham to corn, continue cooking on low heat for another 20 minutes. Pickle meat is also very good in this dish. |
