PEAS & PEANUTS SALAD 
2 (20 oz.) pkgs. frozen peas
2 tbsp. salt
2 tbsp. sugar
2 ribs celery, chopped fine
1 sm. onion, chopped fine
2 c. real mayonnaise
2 tbsp. lemon juice
1/4 c. sugar
4 c. salted peanuts (red skins)

In large pan, barely cover peas with cold water. Add salt and sugar. Bring to boiling and remove from heat. Drain and cool. Chop celery and onion and mix with mayonnaise. Add lemon juice and sugar, stirring until well blended. Pour this mixture over cooled, well drained peas and blend gently. Add peanuts and blend again. Chill at least 1 hour before serving. Serves 10 to 12.
