GLAZED APPLE BREAD 
1/2 c. shortening
1 1/3 c. sugar
1/4 tsp. salt
1 tsp. vanilla
2 lg. eggs
1/2 tsp. cinnamon
2 c. plain flour
2 tsp. baking powder
2 tbsp. milk
1 c. chopped apples
1/2 c. chopped pecans

Mix all ingredients; pour into loaf pan. Bake at 325 degrees for 1 hour and 15 minutes. I usually make 3 cakes and divide following Frosting recipe to frost the 3 cakes.

FROSTING:

1 (8 oz.) pkg. cream cheese
1/2 stick butter
1 box confectioners' sugar
1 tsp. vanilla
2 tbsp. milk
1 c. chopped nuts

Cream butter and cheese until smooth. Add sugar gradually. Add vanilla and beat until creamy. Frost cake and sprinkle with extra pecans if desired.
