SCALLOPED SWEET POTATOES AND
APPLES
 
4 1/2 tbsp. butter, divided
2 (16 oz. or 1 lb.) cans sweet potatoes, whole, divided, slice potatoes thin,
long way
3 Granny apples, peeled, cored, thinly sliced, divided
1/2 c. brown sugar, divided
Salt to taste, optional (good without salt)

1. Heat oven to 350 degrees.

2. Grease 1 1/2 quart covered baking dish with 1/2 tbsp. of butter. Arrange half the potatoes in an even layer on bottom of dish. Cover with half of the apples. Sprinkle with half the brown sugar and dot with remaining butter, lightly sprinkle with salt (optional).

3. Repeat layers with remaining ingredients.

4. Bake, covered, for 30 minutes.

5. Remove cover and baste with juices in dish. Bake uncovered 30 minutes longer, baste again.

6. Serve. Serves 4-6. P.S. This dish is great with chicken.

Footnote: Throw away all liquid from potatoes except 1/4 can. Pour this over mixture to keep apples and potatoes from drying while baking. Baste several times.
