CHICKEN BREAST ALA JOE 
Large boneless chicken breast halves
1/2 tsp. salt
1/2 tsp. pepper
1 tbsp. olive oil or salad oil
1 tbsp. butter
3 tbsp. chopped green onions
1/2 c. tomato sauce
1/2 tsp. paprika
1/2 tsp. Italian seasoning

Place chicken between wax paper. With mallet pound until 1/4 inch thick, sprinkle lightly with salt and pepper. Heat 1 tbsp. oil and butter in skillet. Cook chicken at high heat two minutes on each side. Transfer to serving platter. In pan add green onions, tomato sauce, paprika, Italian seasoning, stir and cook 1 minute stir constantly. Pour over chicken immediately. Good with noodles or vegetables.
