TURNIP PUFF 
3 c. hot mashed turnip
2 tbsp. butter
2 eggs, well beaten
3 tbsp. flour
3 tbsp. brown sugar
1 tsp. baking powder
3/4 tsp. salt
1/8 tsp. pepper
1/2 c. cheese cracker crumbs (optional)

Heat oven to 375 degrees F. Grease a shallow 1 quart casserole. Combine turnip and butter. Add eggs and beat. Add flour, sugar, baking powder, salt and pepper. Mix until well blended. Turn into casserole. Top with crumbs. Bake 25 minutes or until top is lightly browned.

NOTE: The turnip for this puff may be cooked the day before, mashed and stored in the refrigerator, then heated gently and used as directed.

Serves 6-8.
