ANGEL FOOD CAKE 
1 1/2 c. egg whites
1 tsp. cream of tartar
1 tsp. salt
1 c. sifted sugar
1 c. confectioners' sugar
1 c. cake flour
1 tbsp. angel food cake flavoring or vanilla

Important: Put angel food cake pan in 375 degree oven until ready to pour in batter.

Beat together until soft peaks are formed but not dry: Egg whites, cream of tartar, and salt. Gradually add sifted granulated sugar, 2 tablespoons at a time. Fold into mixture: Confectioners' sugar sifted with cake flour 5 times. Add angel food cake flavoring or vanilla. Bake at 375 degrees for 25 minutes. Watch carefully! Time goes quickly. Invert pan; cool before removing from pan.
