PORK GOULASH
2 tbsp. oil
2 lb. pork cubes (from pork loin, etc.)
1 cup chopped onion
2 tbsp. paprika
3/4 tsp. salt
1/4 tsp. pepper
2 tbsp. all-purpose flour
1 1/2 cups beer or beef broth
1/2 cup dairy sour cream

In a skillet, heat 1 tablespoon oil. Add pork cubes (trimmed, if desired) and cook 3 to 5 minutes, stirring frequently until brown on all sides. Remove meat to a plate. Heat remaining oil in same skillet. Stir in chopped onion, cover skillet and cook 5 to 10 minutes. Stir in paprika, salt, pepper and flour and cook 1 to 2 minutes. Add beer or beef broth and stir. Return pork to pan, cover and simmer 30 to 40 minutes. Remove pan from heat and stir in sour cream before serving.

Serves 6 to 8.
