BURNT SUGAR CAKE 
2 c. sifted cake flour
2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/2 c. butter
1 c. sugar
1 egg, beaten slightly
1 egg yolk
1 c. cold water
1 1/2 tbsp. burnt sugar syrup

Mix and sift flour, baking powder, soda and salt. Cream butter and sugar. Add egg and yolk. Beat until smooth and light. Add alternately water with dry ingredients. Add burnt sugar syrup. Pour into 2 greased and floured 9 inch pans. Bake at 350 degrees for 25-30 minutes. Frost with burnt sugar syrup.

BURNT SUGAR SYRUP:

Heat 1/4 cup sugar, stirring constantly, in a heavy skillet. When melted add a 1/4 cup hot water and stir until dissolved. Cool.

BURNT SUGAR ICING:

2 egg whites
1 1/2 c. sugar
Dash of salt
1/3 c. water
2 tsp. dark corn syrup
2 tbsp. burnt sugar syrup

Combine egg whites, sugar, water and corn syrup in top of double boiler. Heat water to boiling point. Beat with beater for about 7 minutes or until mixture thickens and holds shape. Remove from boiling water. Add burnt sugar syrup and continue to beat until stiff enough to spread.
