BEEF IN POTATO SHELL 
3 lg. baking potatoes
1 tbsp. butter
1 lb. ground beef
1 (16 oz.) can whole tomatoes, undrained
1 env. taco seasoning mix
1/2 c. shredded cheddar
1/3 c. sour cream
2 green onions, with tops, sliced

Bake potatoes then cut lengthwise and scoop out potatoes leaving 1/4 inch shell. Use potatoes however you wish. Brush shells with butter. Place shells, cut sides up, on ungreased cookie sheets. Bake 15-20 minutes until edges are brown. Brown ground beef; drain. Add tomatoes and seasoning mix; break up tomatoes. Heat to boil then simmer uncovered 20 minutes. Spoon beef mixture into shells. Sprinkle with cheese. Heat until cheese is melted. Top with sour cream and onion.
