POTATO WAFFLES 
3 eggs
1 cup all-purpose flour
2 tsp. baking powder
1/8 tsp. salt
1 cup milk
1 tbsp. butter, melted
2 cups cold mashed potatoes

Beat eggs until light and fluffy. Sift dry ingredients; add to eggs. Stir in milk, melted butter and potatoes. Bake in a hot waffle iron. Serve with butter and warm syrup.

Makes 4 waffles.
