IT'S NANCY'S TURN TO COOK BAKED
ROTINI
 
1/2 of (1 lb.) pkg. rotini noodles
1 lb. ground beef
1 c. onion, chopped
1 (28 oz.) can tomatoes, cut up
1 (6 oz.) can tomato paste
1 (4 oz.) can sliced mushrooms, undrained
1 tsp. salt
1/2 tsp. basil leaves
1/2 tsp. oregano leaves
1/4 tsp. garlic powder
1/4 tsp. crushed red pepper, grated
2 c. Mozzarella cheese
1 (16 oz.) cottage cheese

Prepare rotini according to package directions. Drain.

In a large skillet, cook ground beef, onion and green pepper. Drain excess fat. Add tomatoes, tomato paste, mushrooms and seasonings. Simmer on low heat 20 minutes.

Combine cooked rotini and sauce; layer half into a 3-quart baking dish. Top with 1 cup Mozzarella, top with cottage cheese, layer remaining rotini mixture and top with remaining Mozzarella. Bake in a 350 degree oven for 35 minutes. 6-8 servings.
