MEATBALLS AND RICE 
1/2 lb. ground beef
1 egg, beaten
1/4 c. milk
1/4 c. fine bread crumbs
1/2 tbsp. minced onions
1/2 tsp. salt
1/2 tsp. dry mustard
2 tbsp. flour
2 tbsp. salad oil
1 can condensed cream of mushroom soup, undiluted
3/4 c. milk
1 1/2 c. cooked vegetables or 1 pkg. thawed mixed vegetables
1/2 tsp. salt

Combine chuck and next 6 ingredients; shape 12 (1 inch) balls. Sprinkle balls with flour. In skillet, heat oil; brown balls well on all sides. Arrange balls around side of skillet and into center of skillet gradually pour soup combined with milk. Top with vegetables and salt. Cover, simmer 10-12 minutes. Makes 4 servings.

If using frozen vegetables, cook 25 minutes.
