ATHENIAN BABY SPINACH 
1/4 c. olive oil
4-6 cloves garlic, peeled and minced
3 lb. whole baby spinach (may use sm. fresh spinach, stemmed if baby unavailable)
1/2 tsp. crushed, dried rosemary
1/2 tsp. crushed dried Greek oregano
1 tsp. coarse ground black pepper
1/2 tsp. salt
Juice of 2 lemons

Heat olive oil in large skillet over medium-high heat. Add garlic, saute 2-3 minutes, then add spinach. Saute 2-3 minutes. Add all seasonings. Squeeze on lemon juice. Serve soon as possible. Serves 10.
