SWEET POTATO CASSEROLE 
1 (16 oz.) can sweet potatoes, drained and mashed
2-3 tbsp. milk
2 tbsp. melted butter
1/8 tsp. cinnamon
1 can pineapple chunks, drained
2 tsp. melted butter
Coconut, flaked

Stir together mashed sweet potatoes, 2 tablespoons melted butter, 2-3 tablespoons milk and the cinnamon. Top with pineapple chunks. Toss together the coconut and the remaining 2 teaspoons of melted butter; sprinkle over sweet potato mixture. Bake in uncovered casserole dish at 350 degrees for 20 minutes.
