CRAWFISH CASSEROLE 
1/2 c. butter
1 c. chopped onions
2 c. crawfish fat
1/2 c. chopped bell pepper
1/2 c. green onions
1/2 c. chopped parsley
2 lbs. crawfish tail
1/2 tsp. black pepper
1/2 tsp. red pepper
Salt to taste
2 1/2 c. cracker crumbs
1 egg, beaten
1 c. mushrooms

Heat butter in skillet. Add onions; saute 5 minutes. Add crawfish fat; cook 10 minutes. Add bell pepper, green onion and crawfish tail; cook 5 minutes. Add seasoning and parsley. Remove from heat. Add cracker crumbs and egg. Stir well. Pour in buttered casserole dish. Add cracker crumbs on top. Garnish with mushrooms. Bake 300 degrees for 25 minutes.
