PEACH DELIGHT 
3 c. peeled & sliced fresh peaches
Juice of 1 lemon or 1 tbsp. ReaLemon
1 3/4 c. sugar
3 tbsp. butter
1 c. flour
1 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
1 c. boiling water

Sprinkle peaches with lemon juice. Cream together 3/4 cup sugar and the butter. Add flour, baking powder and salt. Add milk. This will form a stiff batter. Spread peaches in buttered 8 x 10 inch baking dish. Spread batter over peaches.

Combine 1 tablespoon cornstarch and remaining 1 cup sugar. Sprinkle over top of batter. Pour boiling water over all. Bake about 1 hour at 350 degrees. (In place of peaches you can use 4 cups of cut up rhubarb. When I make the rhubarb, I use 2 tablespoons cornstarch with the sugar.)
