LIVER FOR EASTER 
1/4 c. salad oil
2 med. cloves garlic
2/3 c. chopped onion
1 lb. liver, cut in thin strips
2 tbsp. flour
2 tsp. sugar
1/4 tsp. pepper
1 c. water
2 tbsp. soy sauce
2 tbsp. sesame seed (optional)

In skillet, heat salad oil and saute' garlic and onion (also sesame seed if desired) until golden. Add liver, saute' until it loses its red color. Stir in flour, sugar, salt and pepper. Add water and soy sauce. Bring to a boil and simmer for 2 to 3 minutes. Spoon over boiled potatoes or rice.

P.S. Liver slices easier when frozen.
