MUSHROOM FRITTERS 
FOR 12 FRITTERS YOU WILL NEED:

4 oz. mushrooms, roughly diced
1 tbsp. lemon juice
2 tbsp. each chopped green onion and parsley
1 c. sifted all-purpose flour
1 tsp. baking powder
3/4 tsp. salt
1/2 tsp. dried thyme leaves
1 egg, separated
2/3 c. milk
Oil for deep frying

1. Toss diced mushrooms with lemon juice, green onion and parsley.

2. Stir together flour, baking powder, salt and thyme. Combine with mushroom mixture.

3. Beat egg yolk and milk together. Stir into mushroom mixture. Blend until moistened.

4. Beat egg white until stiff peaks form. Fold into mushroom mixture.

5. Drop batter by tablespoonfuls into oil, heated to 375 degrees F. Fry a few at a time, until golden brown, about 2 minutes, turning once.

6. Drain on rack lined with paper towels. Serve hot.
