MEAT PIE SHELL:

1 lb. ground beef
2/3 c. Quaker Oats (quick or old fashioned, uncooked)
1/2 c. Thousand Island dressing
1 egg
3/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. garlic powder

For meat pie shell, combine all ingredients; mix well. Press onto bottom and sides of 9 inch pie plate. Bake in preheated moderate oven (350 degrees) 15 minutes; drain.

FILLING:

1 (16 oz.) can sauerkraut, drained
2 c. (8 oz.) shredded natural Swiss cheese
1 1/2 tsp. caraway seed

For filling, combine all ingredients, toss lightly, mixing well. Spoon into partially baked meat shell. Continue baking 10 to 12 minutes or until cheese is melted. Cut into wedges serve with additional Thousand Island dressing, if desired. Makes 6 servings.

Variation: To prepare in microwave oven, cook meat pie shell in microwave oven 6 to 7 minutes, rotating dish 1/4 turn 3 times; drain. After filling, continue cooking in microwave oven 5 minutes, rotating dish 1/4 turn 3 times.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I discovered this several years ago, and LOVED it! Plus it's pretty easy to make. The only things I change, is to take about a heaping tablespoon of light brown sugar, mix it with a little water to make a thin syrup, and mix that into the sauerkraut. For me, that takes that slightly bitter edge off the sauerkraut. I also leave out the salt entirely (watching my sodium intake). Neither of these makes a noticeable difference to the taste.
