CHICKEN EGGPLANT SPAGHETTI 
4 chicken breasts
1 med. eggplant
2 med. zucchini
1 green pepper
1 onion
Garlic (2 cloves, fresh)
1 (16 oz.) can whole tomatoes
1 (16 oz.) can tomato sauce
1 (6 oz.) can tomato paste
Basil, thyme, oregano, parsley flakes

Peel eggplant and cut into slices. Place in ice cold water while preparing recipe. Slice chicken into strips, brown in olive oil. Set aside.

Brown onion and green pepper until tender. Add machine and eggplant. Add chicken, tomatoes, tomato sauce and paste (with a little water). Add seasonings (as desired). Simmer 2 hours. Serve over spaghetti.
