2 (8 oz.) pkgs. cream cheese, room temperature
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
Vanilla wafers
Strawberry or cherry pie filling
Cupcake liners

Preheat oven to 350 degrees. Mix cream cheese with sugar till fluffy. Add eggs; beat well. Add lemon juice and vanilla. Line muffin pan with liners. Put one vanilla wafer in bottom of each liner. Fill liners 2/3 full and bake at 350 degrees for 20 to 25 minutes, or until edges are golden. Let cool, then top with a spoonful of pie filling. Yield: 20 muffin cakes.
