TOMATO JAM | |
3 1/2 lb. tomatoes (seeded & chopped) 1/4 c. lemon juice 1 (1 3/4 oz. pkg.) light powdered fruit pectin 3 c. sugar Simmer tomatoes and juice uncovered for 10 minutes. Measure 3 1/3 cups. Return to pan. Stir 1/4 cup sugar into pectin. Add to tomatoes. Bring to rolling boil, stirring. Stir in remaining sugar. Boil hard for 1 minute. Remove from heat; skim off foam. Ladle into 1/2 pint jars. Process for 15 minutes. Makes five 1/2 pint jars. |
