CARROT CASSEROLE 
4-5 carrots, sliced and cooked
1/2 lb. Velveeta cheese, cubed
1/3 c. butter
1/2 med. onion
Ritz crackers smashed

Saute onion in butter. Layer carrots and cheese in casserole. Pour onion and butter over this. Top with Ritz crackers. Bake 350 for 35 minutes or until good and bubbly. Double everything for larger casserole.
