CAJUN SCALLOPS 
1-2 lb. scallops
2 tbsp. butter
1 tbsp. olive oil
4 cloves garlic, minced
Parmesan cheese
1 tsp. basil
2 tsp. lemon juice
1 can Del Monte Cajun tomatoes, chopped
1/2 c. sliced mushrooms (optional)

Preheat oven to 400 degrees. Wash scallops and pat dry. Cut in small pieces, if desired. Add lemon juice, set aside. Saute garlic in oil and butter for 1 minute. Add mushrooms and tomatoes, cook over low heat 2-3 minutes. Add basil, simmer for 5 minutes. Add mixture to scallops in a baking dish, top with Parmesan cheese. Bake for 15 minutes.
