CHEESE CORNBREAD 
2 1/2 c. cornbread mix
2 c. buttermilk
1/2 c. oil
2 eggs, beaten
1 med. onion, chopped fine
3/4 can creamed corn (17 oz. size)
1 1/2 c. shredded extra sharp cheese (1/2 lb.)

Put cornbread mix in a large bowl. Add buttermilk and stir. Add other ingredients in order, except cheese. Mix well. Pour 1/2 mixture into 3 greased pie pans. Spread 1/2 cheese on top. Pour remaining mixture over cheese. Put remaining cheese on top. Bake at 350-375 degrees for 35-45 minutes.
