PEANUT BRITTLE 
2 c. sugar
1 c. light corn syrup
1 c. water
2 c. shelled unroasted peanuts
1 tsp. salt
2 tbsp. butter
2 tsp. baking soda

Combine sugar, syrup and water in large heavy skillet. Cook slowly over medium heat, stirring constantly until sugar is dissolved. Continue cooking until mixture reaches the soft ball stage or until small amount of mixture dropped into very cold water forms a soft ball. Add peanuts and salt; cook to the soft crack stage (290-300 degrees). Mixture will be golden brown. Watch mixture carefully to avoid burning.

Remove from heat. Add butter and soda, stirring to blend (mixture will foam). Pour onto 2 large buttered baking sheets; while still warm, pull out to desired thinness. When cold, crack into pieces. Makes 2 pounds.
