CHICKEN AND RICE CASSEROLE 
1 1/4 c. rice
Chicken pieces
1 1/2 c. boiling water
1 can cream of chicken or cream of mushroom soup
1 env. Lipton onion soup mix

Line 13 x 9 x 2 inch pan with aluminum foil and butter well. Pour in rice, set aside. In large bowl, mix soups and water. Dip chicken pieces in soup mixture, then place on a platter. Pour remaining soup mixture over rice, put chicken pieces on top, cover lightly with foil and bake at 350 degrees for 1 1/2 hours.
