TAMALE PIE 
lb. chopped beef
1 tbsp. shortening
1/2 c. chopped onion
1/2 c. chopped green peppers
2 (15 oz.) cans tomato sauce
2 cloves garlic, minced or pressed
1 tbsp. chili powder
2 flakes red pepper, crushed
1 (1 lb. 2 oz.) can kidney beans
1 (8 1/2 oz.) pkg. corn muffin mix
1 egg
1/3 c. milk

Preheat oven to 400 degrees. Brown the meat in a skillet in shortening. Add onions, pepper, tomato sauce, garlic, chili powder, and red pepper; cook over low heat for about 30 minutes. Stir occasionally. Add beans and remove from heat. Prepare corn meal muffin batter according to directions on package with egg and milk. Pour meat and beans into 2 1/2 quart baking dish. Cover top with corn meal batter and bake for about 40 minutes or until top is brown. Serve hot. Makes six servings. The meat and beans can be prepared the day before and stored in refrigerator.
