MEXICAN MEAT LOAF 
1 tsp. plus 1 tbsp. vegetable oil
1 c. chopped onion (or less)
1 c. chopped red or green pepper
2 cloves garlic, minced (I used garlic powder)
1 pkg. instant beef broth
1 lb. ground beef, veal or turkey
4 oz. shredded cheddar cheese
3/4 c. plain dried bread crumbs
1/2 c. tomato sauce
1/2 c. plain yogurt
2 tsp. parsley flakes
2 tsp. Worcestershire sauce
1 tsp. chili powder

Saute onions, pepper and garlic broth. Mix in oil. Put all ingredients in mixing bowl and shape into loaf. Bake at 375 degrees for 45 minutes.
