BUTTER NUT COOKIE 
1 c. sugar
1 c. butter
1 egg
2 c. flour
1/2 tsp. cinnamon
1/4 c. nuts (pecans, walnuts or almonds)

Cream butter and sugar thoroughly. Add unbeaten egg yolk, then add sifted flour and cinnamon. Put into long pan and work into a thin a layer as possible. (The dough is like pie crust and must be patted into the pan well.) Take unbeaten egg white and cover top of dough, then sprinkle with nuts. Bake for 1/2 hour in slow 300 degrees. Cut in squares while hot and let stand until cool before taking out of pan.
