SHEPHERD'S PIE 
1 c. onion, chopped
1/2 c. celery, chopped
1 tbsp. butter
1 (3 1/2 oz.) pkg. brown gravy mix
1 lb. smoked sausage
1 (10 oz.) pkg. frozen peas
1/4 tsp. salt
1/8 tsp. pepper
2 c. mashed potatoes, cooled
2 tbsp. parsley

Saute onion and celery in butter in 1-quart skillet until tender. Remove from heat. Prepare gravy according to package directions and add to skillet. Stir in sausage, peas, salt and pepper. Pour mixture into lightly greased 10 inch deep dish pie plate. Combine mashed potatoes and parsley on in small bowl, stir until blended and attractively spoon or pipe potato mixture around edges of dish. Bake at 350 degrees for 35 minutes. 6 to 8 servings. (May use instant potatoes to speed preparation.)
