PECAN PIE SURPRISE BARS | |
1 (18 1/2 oz.) yellow cake mix 1/2 c. melted butter 4 eggs, divided 1/2 c. firmly packed brown sugar 1 1/2 c. dark corn syrup 1 tsp. vanilla extract 1 c. chopped pecans Set aside 2/3 cups cake mix. Combine remaining cake mix, butter, and 1 egg in a large mixing bowl. Mix with fork until crumbly. Press crumbs in greased 13 x 9 x 2 inch pan or baking dish. Bake at 350 degrees for 15 or 20 minutes or until light golden brown. Combine reserved cake mix, 3 eggs, brown sugar, corn syrup, and vanilla in a mixing bowl. Beat at medium speed in electric mixer 1 or 2 minutes. Pour over partially baked crust and sprinkle with pecans. Bake at 350 degrees for 30 to 35 minutes. Cool and cut into bars. Yield: 3 or 4 dozen bars. |
