HELEN'S "EASY ON THE COOK" MASHED POTATOES | |
12 med. potatoes, peeled, boiled, drained and cut up (depending on the size, use 1-2 more if your family likes potatoes) 1 1/2 c. room temperature butter, cut into about 9 sections (do not melt) 8 oz. room temperature cream cheese, cut into 6 sm. pieces Mix all of the above ingredients with mixer adding the butter and cream cheese 1/3 at a time. Spoon and spread into an 8 1/2 x 13 inch glass dish, covered well with plastic wrap. These can be prepared up to 3 days ahead of time, or made the night before a large dinner. To re-warm: Take out of refrigerator and bring to room temperature, about 25-30 minutes. Brush potatoes lightly with 3 tablespoons of melted butter. Heat at 350 degrees for 20-25 minutes or until heated through. The potatoes will have a slightly crusty top but will be light and creamy inside. Serves 10-12. |
