EVER - READY DELI STYLE
REFRIGERATOR SALAD
 
2 lb. head shredded cabbage
3 cucumbers, sliced
2 carrots, scraped & sliced
2 red onions, sliced
1 1/2 c. white or cider vinegar
1/2 c. apple juice
1/2 c. water
3 tbsp. polyunsaturated veg. oil
Salt to taste (some people like a lot of salt)
1 tbsp. liquid sugar substitute (opt.)

42 calories per serving. Cover and marinate 24 hours, keeps a week covered.
