CLAM FRITTERS 
1 (10 oz.) can whole baby clams
2 eggs, lightly beaten
1/2 cup milk
3/4 cup flour
1 teaspoon baking powder
salt and pepper to taste
hot oil for sautéing
tartar sauce

Drain clams, reserving 1/2 cup liquid. Mince clams. Combine clams, reserved liquid, eggs, milk, flour, baking powder, salt and pepper. Drop batter by one measuring tablespoon into hot oil. Brown 4 or 5 minutes, turning once. Serve with tartar sauce.

Makes 24 fritters or 4 servings.
