BROCCOLI & RICE CASSEROLE 
1 pkg. frozen chopped broccoli
1 c. rice
2 c. water
1 stick butter
1/2 med. onion
1/2 green pepper
1/2 c. celery, chopped
1/2 c. carrot, chopped fine
1 can cream of chicken soup
1/2 c. milk
1 c. shredded cheese

Cook broccoli until tender; drain well. Cook rice until tender. Saute onion in butter; add pepper, celery, carrots and saute. When tender, add soup, milk and half the cheese. Add broccoli and rice. Pour into casserole, cover with remaining cheese. Bake at 350 degrees for 30 minutes or until brown.
