LO - CAL CORN MUFFINS 
1 egg
1/4 c. cornmeal
1/3 c. crushed pineapple
1/3 c. non-fat skim milk
1 tsp. vanilla
1/2 tsp. baking powder
Artificial sweetener (1 or 2 packets)

Mix ingredients, pour into non-stick muffin pan. Bake at 400 degrees for 8 to 10 minutes. Makes 4 muffins.
